Moringa and Matcha Pancakes

For the Pancakes:

🌱 1 cup spelt flour

🍵 2 tablespoons moringa powder

🍵 1 tablespoon matcha powder

🍚 2 tablespoons sugar

🥄 1 teaspoon baking powder

🥄 1/2 teaspoon baking soda

🧂 1/4 teaspoon salt

🍏 1 tablespoon apple cider vinegar

🌾 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water, let sit for 5 minutes)

🥥 2 olive oil

🌿 1 teaspoon vanilla extract






Step 2: Method


  1. Combine the dry ingredients - flour, moringa powder, matcha powder, sugar, baking powder, baking soda, and salt in a mixing bowl.

  2. In a separate bowl, create the vegan buttermilk by mixing plant-based milk with apple cider vinegar. Add the flax egg, olive oil, and vanilla extract to the buttermilk mixture.



Step 3: Method


  1. Pour the wet ingredients into the dry ingredients, gently folding until just combined. IMPORTANT: Avoid overmixing; a few lumps are okay.

  2. Adjust the batter consistency by adding more plant-based milk if needed.


Step 4: Method

  1. Heat a medium size frying pan or non-stick skillet over medium heat. Lightly grease with the olive oil.

  2. Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form, then flip and cook until slightly darkened.

  3. Stack the pancakes and top with your favourite vegan toppings - banana, maple syrup, fresh berries, chopped nuts, or dairy-free yogurt.
